2 -15oz. cans black beans, drained and rinsed
1 – 15oz. can whole kernel corn drained
6-8 Roma tomatoes chopped
2 avocados, peeled and chopped
1 small red onion, chopped
¼ cup fresh cilantro, chopped
3-4 tbls. Olive oil
1 tsp. Salt
½ tsp. Course ground pepper
1 tbls. Red wine vinegar (may add more to taste)
Jalapeno peppers to taste, optional
Combine all ingredients in large bowl. Cover and chill. Garnish, if desired with avocado slices and/or fresh cilantro. Serve with tortilla chips.
