Chinese Chicken and Rice

 
 

Makes 1 serving
1 – 5 oz. can of Swanson’s Premium Chunk Chicken Breast in water-drain water off chicken. (the canned chicken is for ease, if you’re not in a hurry cook strips of chicken breast)
½ cup cooked brown rice
¼ vidalia onion chopped
3 oz. snow peas
“Sushi grade” soy sauce-Kymlan (This tastes better than regular soy sauce. It can be bought at Harris Teeter at the Sushi counter.)

Spray a frying pan with Pam and brown your onion. Add the cooked rice and snow peas to your onion with a shake or three of soy sauce, continue browning. Stir in chicken and serve. I cooked all of this very quickly on medium high heat. Add more soy sauce after cooking if you like. But watch out for to much sodium!
