6-8 TALAPIA FILETS (FRESH OR FROZEN) fresh is better
OLIVE OIL (USE A SPRITZER TO MINIMIZE THE AMOUNT YOU USE)
MRS. DASH SOUTHWESTERN CHIPOTLE SEASONING
PREHEAT OVEN TO 425˚. Spray baking pan with Pam and place tilapia filets in pan. Spray tilapia filets with olive oil and sprinkle each filet with Mrs. Dash Southwestern Chipotle or Extra Spicy Seasoning.
Bake 20-25 mins. or until fish is flakey.
To serve, top with a ¼ to ½ cup of the mango salsa.
BETHY’S MANGO SALSA
2-3 MANGOS - CHOPPED
1 RED PEPPER LARGE – CHOPPED
8 SCALLIONS - CHOPPED
1 – 2 JALAPENOS – FRESH, CHOPPED
¼ TO ½ CUP CILANTRO – CHOPPED (the amount is a taste preference)
THE JUICE OF 1 LIME
2 TBLS. OLIVE OIL
SALT AND PEPPER (fresh ground is best)
Chop and mix all ingredients in large bowl. It is ready to serve immediately, however the longer it sits the better the flavor gets.
