Daddy’s Egg Pancakes (yes Lee loves them)

 
 

3 egg whites
1 whole egg
½ tsp. vanilla extract
1/8 tsp. baking powder
1 tsp. level flour (really a pinch between the thumb and pointer finger)
1 tbsp.  2% milk

Makes 1 pancake. 
Whisk all ingredients together in a bowl.  Preheat a nonstick frying pan on medium heat.  Spray with Pam.  Pour all of mixture into a preheated non-stick frying pan.  Cook until solid enough to flip.  Flip and cook until egg whites are solid. 
You can serve with fresh fruit and just a drizzle, about a teaspoon, of maple syrup!  Yummy……
