Iacono Egg Fu Yung

3 egg whites
1-1/2 to 2 oz. precooked chicken breast chopped up
Chopped onions, to taste. No more than ½ cup.
Mix all ingredients together and cook in a Pam sprayed pan as an omelet.

Serve over ½ cup brown rice with light soy sauce to taste.

This recipe creates 1 serving.
