Ground Turkey Breast about 1lb.
1 egg
1/3 cup wheat germ
3 tsp Gourmet Garden Herb Blend: Italian Blend
½ tsp Gourmet Garden Herb Blend: Garlic
1 tbsp olive oil
Salt and pepper to taste

The Gourmet Garden Blends come in tubes(like toothpaste) and are found near the salad veggies in the grocery store. They are much easier to use and stay fresh longer than bunches of fresh herbs. ********
In a large bowl mix the ground turkey , egg, wheat germ, and herbs. Save the olive oil for cooking and coating your hands. I mix this with my hands, but first coat your hands with olive oil, you only need a little. (Since the turkey breast has no added fat it really sticks to your hands!) Once all ingredients are mixed together make meat mixture into golf ball sized meatballs. During this process you will have to recoat your hands with a little olive oil. In a large sauce pan heat your olive oil over medium high heat. Place the meatballs into the heated sauce pan and cook on all sides until brown. Add your favorite spaghetti sauce in with the meatballs and let simmer for and hour. The longer they cook in the sauce the better the flavor!!
Our favorite spaghetti sauce is Classico spicy tomato basil or regular tomato basil.

To cook a spaghetti squash: Pierce the squash with a knife in several places like you would a baking potato for cooking in the microwave. Place the whole squash in a microwave safe bowl or dish, this is to catch juice that will come out of the squash. Cook on high in the microwave about 4 minutes per lb. make sure you turn the squash so the bottom side is up halfway through the cooking. When done let it sit for about 10 minutes because it will be too hot to touch. With a large knife cut in half the long way. Scoop out the seeds and the fibers around the seeds. Just like you would any other squash. You will already see that the cooked squash looks like spaghetti. Scoop out the meat of the squash gently with a spoon or fork. It will come out in strands like spaghetti. Serve with spaghetti sauce and meatballs over it.
