Large portabella mushroom caps (as many as you need-2 per family member)
Pizza sauce
Tomatoe
Fresh basil
Grilled chicken breast
Favorite veggies
Fat free mozzarella cheese shredded
Olive oil spray
Italian herbs

With underside up grill large portabella mushroom caps on the George Foreman grill about 4 minutes. Place grilled caps on a baking sheet or stone. Spread a tbsp or 2 of your favorite pizza sauce over each cap. Add fresh basil, fresh tomato, previously grilled chicken pieces, and any other veggies you like, Italian herbs, a spritz or 2 of olive oil and top with fat free mozzarella. Put under the broiler until cheese is melted, about three minutes.
