Colin’s Twice Baked Potatoes

 
 

1 cup Fresh Basil chopped
1 cup Fresh or canned diced tomatoes
2-3 tbsp. White wine (depending on how big your skillet is.)
Fat free mozzarella cheese
4 Baked potatoes

In a frying pan on the stove sauté the fresh chopped basil, diced tomatoes, and white wine until liquid is gone.
Cut your already baked potatoes in half the long way. These can be baked in the microwave.
Scoop out the meat of the potato and mash it in the pan with the sauté mix.
Re-stuff the potatoes with the mashed potato mix.
Place the potatoes on a cookie sheet.
Top potatoes with just a sprinkle of fat free mozzarella and put under the broiler to brown the top about 5 mins.

If you like garlic and onion, you can add these to the sauté mix also.
